could I use this in my off grid cabin to record temperatures inside during the winter

There’s no reason you couldn’t use this logger for that application.  The logger requires that you connect it to a computer to set it up and read out the data.  Other than that you can leave it to record temperature as a standalone device. 

The AAA batteries will power the device for 6 months to a year.
