Can this only be mounted on a wall (e.g: drywall) vs 'I' beam pillar? Thanks!

The back of the cover is made up of a flat plastic base with screw holes in it. It can be easily attached to a wall. You could probably also post mount it on a beam pillar but it might take some small modifications to the mounting plate.&...

Does the wall cover have a mounting device inside to hold the data logger or does it just rest inside the case?

There is no mounting device inside the cover. You may have to adjust your mounting method depending on the logger you use with it but we find that Velcro strips or double sided tape works well.
